Olive Garden's Chicken Gnocchi Soup


One dish that I love very much is Olive Garden’s Chicken Gnocchi Soup. This soup has a rich taste and is very creamy. To be honest, I find that this is my favorite dish at the restaurant. I practically go there for the soup especially during lunch time when it is unlimited soup, salad, and breadsticks.
Since I have changed locations, I have been craving this soup. So I had to do something in order to taste this delightful soup again. I made it!!! I used a crock pot for this recipe. Please see below:


Tools:
·         Crock pot
·         Skillet
·         Large Spoon
Ingredients:
·         3 stalks of celery
·         3 cups chicken broth
·         1 can of Campbell’s Condensed Cream of Mushroom
·         1 to 1 ½ pound chicken breast
·         1 small onion
·         ½ cup of frozen peas
·         A handful of fresh spinach
·         1 pack of mini gnocchi
·         ½ cup of shredded carrots

Seasonings:
·         Salt
·         Fresh cracked black pepper


Directions: 
1.      Cut the chicken breast into small diced sized pieces and place in a bowl.
  • ·         Add a pinch of salt and crack some pepper on the chicken
  • ·         Drizzle the chicken with olive oil
  • ·         Place Saran Wrap on the top of the bowl and refrigerate for 15 minutes.
2.      Next, cut your onion into small pieces.
  • ·         Place your onion to the side.
3.      Cut your celery into bite sized pieces.
  • ·         Place your chopped celery to the side.
4.      Now get your crock pot ready!!! Add your Chicken Broth and your Campbell’s Cream of     Mushroom and stir until it is evenly mixed. Place the crock pot on Low. 
5.      Take a nonstick skillet and drizzle it with olive oil. Throw in the onions and the chicken as well. Cook the chicken. Remember to stir occasionally. Once the chicken is no longer pink in the middle and the onions are translucent in color place the pot to the side. 
6.      Add your ingredients to the crock pot. The following ingredients should go in:
  • ·         Cooked Chicken and Onions
  • ·         Celery
7.      Let this cook on low for 7 hours.
8.      Once 7 hours pass, add the remaining ingredients to the crock pot. These include:
  • ·         ½ cup of frozen peas
  • ·         A handful of fresh spinach
  • ·         1 pack of mini gnocchi
  • ·         ½ cup of shredded carrots
Cook for an additional 30-45 minutes. 
9. Add Salt and Pepper to taste. Enjoy!!!

With this dish, I love to prepare fresh bread or toast. It is quick and easy to make! I hope you enjoy.
